Easy Veggetable Fritata

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar, feta, or your choice)
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped spinach or kale
  • 1/2 cup chopped mushrooms (optional)
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté onions, bell peppers, and mushrooms until softened (about 5 minutes).
  5. Add spinach and cook until wilted.
  6. Pour the egg mixture over the vegetables in the skillet.
  7. Sprinkle cheese evenly on top.
  8. Cook on the stove for 2–3 minutes, then transfer skillet to the oven.
  9. Bake for 10–15 minutes or until the eggs are set and the top is lightly golden.
  10. Let cool for a few minutes before slicing and serving.

Tips

  • Use any vegetables you have on hand—zucchini, tomatoes, or broccoli work great!
  • Add herbs like basil or parsley for extra flavor.
  • Frittata keeps well in the fridge for 3–4 days—perfect for meal prep!
