Avocado Toast with Poached Egg

Ingredients

  • 1 ripe avocado
  • 2 slices of bread (sourdough or whole grain recommended)
  • 2 eggs
  • 1 tbsp vinegar (for poaching water)
  • Salt and pepper to taste
  • Optional toppings: red pepper flakes, lemon juice, microgreens, feta cheese

Instructions

  1. Toast the bread to your desired crispiness.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork. Add salt, pepper, and a splash of lemon juice if desired.
  3. Bring a pot of water to a gentle simmer and add the vinegar.
  4. Crack each egg into a small bowl. Create a gentle whirlpool in the water and carefully slide in one egg at a time.
  5. Poach each egg for 2.5 to 3 minutes, until the whites are set but the yolk is still soft.
  6. Remove the eggs with a slotted spoon and drain on a paper towel.
  7. Spread the mashed avocado on each slice of toast, and top with a poached egg.
  8. Finish with a sprinkle of salt, pepper, and any additional toppings you like.

Tip: For extra flavor, try adding a drizzle of olive oil or a sprinkle of everything bagel seasoning!
